So for today’s recipe, this will surely hit your taste buds like what muffins from gourmet bakeshops do BUT with a healthier kick. If you can’t find the ‘to-die-for’ blueberry muffin recipes to serve on July 11, why don’t you give this recipe a try? You can also ask your kiddos to help you make these muffins and share a fun time with them in the kitchen. It’s bonding time!
To make this recipe, you’ll need:
- 2 mixing bowls
- 1 rubber spatula
- scooper
- fork
- measuring cup
- muffin papers (optional)
- baking tray
For the muffin mixture:
- 1 1/2 cups of all-purpose flour
- 3/4 cup of white sugar
- 1/2 teaspoon of salt
- 2 teaspoons of baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup of milk
- 1 cup of fresh blueberries
For the crumb toppings:
- 1/2 cup of sugar
- 1/3 cup of all-purpose flour
- 1/4 cup butter, cubed into smaller pieces
- 1 1/2 teaspoons of ground cinnamon
If your tools and ingredients are ready, let’s get started!
Instructions:
Step 1: Pre-heat and Prepare
Pre-heat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Grease your muffin pan or if you have muffin papers, line it on the pan. This recipe is good for 8 servings so if your pan has more than 8 pockets/spaces, fill it in with 1 tablespoon of water before baking.
Tip: The empty spaces of the pan tend to burn the muffins faster.
Step 2: Dry Ingredients
In a large mixing bowl, combine 1 1/2 cups of all-purpose flour, 3/4 cups of white sugar, 1/2 teaspoon of salt and 2 teaspoons of baking powder.
Step 3: Wet Ingredients
In a measuring cup, pour 1/3 cup of vegetable oil; add one egg and 1/3 cup of milk. Stir it well and combine it with your flour mixture. Be careful not to overmix the batter at this point.
Step 4: Add the Blueberries
Carefully fold 1 cup of fresh blueberries into the batter. Use a flexible rubber spatula to make this task easier. Once the blueberries are evenly distributed throughout the batter, set it aside.
Step 5: Sweet Cinnamon Crumb Toppings
In a small bowl, combine 1/4 cup of butter (sliced into small cubes), 1/2 cup of sugar, 1/3 cup of all-purpose flour and 1 1/2 teaspoons of cinnamon. Mix the ingredients together using a fork until crumbly.
Step 6: Baking Time!
Spoon the batter into the muffin pan using a scooper. Sprinkle the crumb toppings on top of each muffin. Bake them in your pre-heated oven for 20- 25 minutes.
Tip: You’ll know that the muffin is done when you put a toothpick in the center and it comes out clean when pulled.
