For a lot of us, our New Year’s resolutions often include eating healthier. This resolution forces us to become chefs because I think we all know that restaurant food is filled with unhealthy fats, sugars, empty calories, etc.
I love eating out just as much as the next person, but when I’m trying to eat healthy, I’m forced to cook my own food at home. This is no easy feat considering my cooking level is on par with that of a six-year-old. Really, though, I just mastered blue box mac n cheese.
So I went on a Pinterest quest to find healthy and easy recipes. This is what I found:
1. Chili Lime Chicken
Chicken doesn’t have to be boring! Add some chili and lime and you’re good to go!
2. Slow Cooker Chicken Fajitas
Slow cooker recipes are the best. You just stick all the ingredients in the Crock Pot then forget about it for a few hours. My favorite kind of recipes.
3. One Pot Zucchini Mushroom Pasta
If you’re not watching your carbs, this pasta is full of healthy vegetables and flavor.
4. Buffalo Cauliflower Bites
For days when you just want unhealthy fried buffalo wings, make this instead!
5. Cucumber Tomato Avocado Salad
Lettuce-based salads are a thing of the past. Try this one out, it will be your new favorite!
6. Pesto Salmon and Italian Veggies in Foil
Salmon is so healthy, but can be pretty boring. Try this Italian version that is full of flavor!
7. Low Carb Zucchini Shrimp Scampi
If you’re watching your carb intake, zucchini “pasta” is a great noodle alternative.

We all need more energy in our lives, right?
