Holiday Gingerbread Recipe Roundup

It’s Christmas time and you know what that means? Gingerbread everything! It’s time to get the oven heated because today, I’m sharing with you the best holiday gingerbread recipe roundup for 2016! Yey!!!

I’ve always loved gingerbreads since I was a little girl. I can still remember my mom baking them on Christmas morning, which is something I really miss now. Anyhow, this is why I make sure that I get my gingerbread fix whenever it’s Christmas time. But hey, for the past two years, I’m no longer buying them but instead, baking my own! So today, I thought of sharing with you holiday gingerbread recipes I collected in the past month. Are you excited? I know I am!

If you’re a novice baker, don’t you worry. These recipes are very easy and simple to do. You don’t need to be a pro to make delicious gingerbread pastry. Actually, you can still make delicious pastries even if you haven’t baked in your life. So if you’re ready, let’s do this ladies!

1. Gingerbread Man Cookie Recipe

Ah! The classic gingerbread man cookies! They’re yummy and very easy to do too! And mind you, these little things won’t run away, so there’s no running involved here. Just some whisking, mixing and cookie cutting and you’ll have your delicious gingerbread man treats in no time!

Instructions:

  1. Mix 2/3 cup canola oil, 1 cup dark brown sugar, 1/4 cup blackstrap molasses until you get shiny and wet sugar.
  2. Add 2 eggs and mix until you get a smooth batter.
  3. Whisk 3 cups all-purpose flour, 2 tsp. cinnamon, 2 tsp. ground ginger, 1 tsp. ginger cloves, 1 tsp. baking soda and 1/2 tsp. salt.
  4. Stir together batter and flour mixture.
  5. Knead the mixture on a floured surface. Keep adding flour until dough isn’t sticky.
  6. Put dough in plastic wrap and refrigerate for 3 hours to overnight.
  7. After refrigerating, take out your rolling pin and roll the dough to 1/4 thickness on a floured surface.
  8. Get your gingerbread cookie cutter and start cutting away.
  9. Put the gingerbread men on a cookie sheet (lightly greased) and bake in the oven preheated to 350 degrees.
  10. Bake for 8 minutes or until you see the men puff up.
  11. Once the cookies are ready, take them out and allow to cool.
  12. For finishing touches, sprinkle powdered sugar. Some prefer vanilla icing and decorating, so it’s really up to you.

2. Gingerbread Cheesecake Bites Recipe

I’m in love with cream cheese so any recipe with cream cheese is definitely going to be on my list. I’m saving this recipe for a Christmas party next week and I’m sure it’s going to taste awesome! Here’s what you need to know about the recipe:

Ingredients:

  • 1 (30 oz) package Pillsbury Gingerbread Cookie Dough (refrigerated section)
  • 4 oz cream cheese (room temperature)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla

Instructions:

  1. Roll two teaspoons of cookie dough into a ball for each cookie. Place balls of dough into paper liners mini cupcake/muffin pan. Make a well/indentation into each ball of dough with a flour dipped mini rolling pin or the back of a measurement teaspoon.
  2. Beat at room temperature cream cheese with powdered sugar. Stir in vanilla. Place filling into a piping bag, cut off the edge of the bag. Place one teaspoon or so of filling into each area of cookie dough.
  3. Bake at 350 degrees for 9 minutes or until cookie tested with toothpick comes out almost clean.
  4. Don’t overfill the cookies with filling as they will rise when baked.
  5. Let cool before removing from cupcake pan.

3. Gingerbread Cake Roll Recipe

Don’t you just love cake rolls? If you do then this gingerbread cake roll is definitely a must-try! Making the cake will require more effort but as long as you stick to the recipe, you’re good. Bake this for the family or even give them as presents, everyone will love them! Here’s how to make them:

Ingredients:
For the cake:
    • 3 eggs room temperature
    • 1/4 cup molasses
    • 1/4 cup honey
    • 1 tbsp melted butter
    • 1/4 cup (50 grams) sugar
    • 1 cup (120 grams) all purpose flour
    • 1/4 tsp baking soda
    • 1/2 tsp ground ginger
    • 1/2 tsp cinnamon
    • pinch of salt
    • powder sugar (for dusting)
For the icing:
  • 1 1/2 cups (360 ml) heavy cream
  • 1/3 cup (40 grams) powder sugar
  • 1 tsp cinnamon

Instructions:

  1. Line a 15X10 jelly roll pan with parchment paper. Grease and flour the pan (and the paper) and set aside.
  2. Heat the oven to 375F.
  3. In a mixing bowl beat the egg yolks on high speed until thickened, about 3 minutes. Add the molasses, honey, and melted butter and mix well.
  4. In a clean grease free bowl, with a clean whisk, beat egg whites until soft peaks form. Slowly add the sugar and continue whisking until firm peaks form.
  5. Carefully fold into the egg yolks mixture.
  6. Sift the flour, baking soda, salt and spices above the egg mixture, slowly folding in making sure you don’t lose all the air that was incorporated with the egg whites.
  7. Spread the batter into the prepared pan and bake for about 11 minutes or until top springs back with touched.
  8. Cool in the pan for about 3 minutes.
  9. In the meantime heavily sprinkle powder sugar on a damp tea towel.
  10. Carefully turn the pan allowing the cake to rest now on the prepared tea towel. Remove the pan and gently peel the parchment paper.
  11. Roll up the cake, starting with the short side. I actually find it easier to roll it with the towel as well, although some advise to peel the towel as you roll. Either way, it’s fine.
  12. Cool completely.
  13. In the meantime make the filling.
  14. In a clean grease-free mixing bowl combine the heavy cream, sugar, and cinnamon and start whisking, on low speed first, slowly increasing to medium speed and whisk until firm peaks form.
  15. Unmold the cake, gently peeling the towel and spread 2/3 of the filling over the cake. Roll it again (this time without the towel). Spread the remaining filling on top of the cake.
  16. Sprinkle some cinnamon (optional)
  17. Let sit for a couple of hours before serving.

4. Starbucks Gingerbread Loaf Recipe

So I love Starbucks’ Gingerbread Latte which is why trying this recipe is a no-brainer for me. And by the way, making this loaf is VERY easy but the final result is surprisingly really tasty! So here it is, the recipe you should try right now!
For the loaf:
  • 1 1/2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 2 1/4 tsp ground ginger
  • 1 tsp salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 tsp orange extract
  • 1 cup applesauce
  • 1 tsp baking soda
For the glaze:
  • 1 1/2 cups sifted confectioners sugar
  • 2-3 tbsp cream
  • 1/2 tsp vanilla extract
Instructions:
  1. Preheat your oven to 350°
  2. In a medium bowl, mix together flour, cinnamon, cloves, ginger, and salt.  Set aside.
  3. In a medium bowl, cream butter and sugar until light and fluffy. Stir in orange extract.
  4. Mix baking soda into applesauce and stir into creamed butter mixture.
  5. Add flour mixture. Mix until smooth, but don’t over mix.
  6. Pour batter into greased and floured loaf pan.
  7. Bake for 40 to 50 minutes or until a toothpick inserted into the center of the cake comes out clean.
  8. Glaze while slightly warm.

5. Gingerbread Cupcake With Cream Cheese Frosting

Saving the best for last, this is definitely my favorite gingerbread pastry in this list. I’m a huge fan of cupcakes and since it’s the gingerbread time of the year, there’s no excuse not to make these! If you’re getting excited, here’s the recipe:
Ingredients:
  • 1½ cups flour
  • 2 tablespoons ground ginger
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • 1½ cups butter
  • 1 cup sugar
  • ½ cup brown sugar
  • 3 tablespoons molasses
  • 4 eggs, at room temperature
  • 1½ teaspoons vanilla
For the frosting:
  • 4 cups powdered sugar
  • 4 ounces cream cheese, softened
  • 1 tablespoon cinnamon
  • ½ teaspoon vanilla
  • 2-4 tablespoons heavy cream

Ingredients:

  1. Preheat oven to 350 and line muffin tins with cupcake liners. Whisk together flour, ginger, cinnamon, nutmeg, and cloves. Set aside.
  2. In another, large bowl cream together butter and sugars until pale and fluffy. Add molasses, beat until combined. Add eggs, beating after each until incorporated. Beat in vanilla. Gradually mix in flour mixture until combined.
  3. Divide batter evenly among the lined cups, filling each ¾ full. Bake about 25 minutes until an inserted toothpick comes out clean. Allow to cool in the muffin tins for about 10 minutes, then transfer to wire racks to cool completely.
  4. When cupcakes are completely cooled, prepare the frosting. Beat the cream cheese until fluffy (about 2 minutes). Add vanilla, cinnamon, and 2 tablespoons of heavy cream and mix until smooth. Gradually mix in powdered sugar. Add 1-2 more tablespoons of heavy cream as needed to thin the frosting to a spreadable consistency. Spread on cooled cupcakes.
