The Best Creamy Green Tea Matcha Souffle Recipe Ever!
If you’re craving for another souffle recipe aside from the usual flavors like chocolate, cheese, and lemon, you’ll absolutely fall in love (without a doubt!) with this creamy and addicting green tea matcha souffle.
Though most people would find souffle recipes intimidating, this recipe is actually simple and easy as pie. Yes, souffle recipes may not be music to everybody’s ears (especially to newbie cooks like me!). But this recipe would make a helpful guide when making one.

For this souffle recipe, you’ll need:
Green Tea Matcha Base:
- 2 tablespoons of all-purpose flour
- 2 tablespoons of granulated sugar
- 1 1/2 tablespoons of matcha green tea powder
- a pinch of salt
- 1/2 teaspoon of vanilla extract
- 1/3 cup of whole milk
- 3 egg yolks
Whipped Egg Whites:
- 3 egg whites
- 2 tsp granulated sugar
For Garnishing:
- butter
- powdered sugar (for the garnish)
If your ingredients are ready, let’s start baking!
Step 1: Prepare your ramekins
Start off by buttering your ramekins. Then add a layer of sugar. This will help the souffle not stick to the wall of the ramekin (it will be easier for it to puff up). Once you’re done, set aside. Now is also the right time to pre-heat your oven to 400 degrees F.
Step 2: Make the green tea matcha base
In a medium saucepan, mix the following dry ingredients together: 2 tablespoons of all-purpose flour, 2 tablespoons of granulated sugar, 1 1/2 tablespoons of matcha green tea, and a pinch of salt.
In a measuring cup, combine 1/3 cup of whole milk and 1/2 teaspoon of vanilla extract. Mix them well then pour into the mixed dry ingredients. Don’t forget to give it a good mix!
Step 3: Heat it up!
Place the saucepan with the mixed ingredients on medium heat. As it heats up on the stove, make sure to continuously whisk the mixture to avoid big flour clumps settling at the bottom.
Once the sauce starts to thicken, take it off from the heat then add 3 egg yolks. Give it a quick stir and put it back on the heat for about 30 seconds. Keep stirring the mixture so you won’t end up with green scrambled eggs! If it reaches a thick, ribbon-like consistency, set aside to cool.
Step 4: Make the whipped egg whites
In a mixer bowl, add 3 egg whites and turn it on a medium speed. Continue whisking until it becomes foamy. Then, increase the speed to medium-high and slowly sprinkle in 2 teaspoons of granulated sugar. Continue beating until it reaches stiff and glossy peaks.
Step 5: Combine the two mixtures together
To incorporate everything, transfer the green tea matcha base into a large bowl then add 1/3 of the whipped egg whites and gently mix them together. Continue combining the mixture evenly to create a thin mixture for the souffle.
Then, take the remaining whipped egg white and mix it with the green tea matcha base. Swoop the spatula in half circle then flatten it down in the middle.
Tip: The key here is to do it gently.
Step 6: Place it in the ramekins
Once the mixing is done, put the mixture into the ramekins you prepared earlier. After filling them in, swipe your thumb around the top. This will help the mixture crawl up evenly.
Step 7: Baking Time!
Place the ramekins on a baking tray then bake in the oven for about 10 minutes. Once they’re all puffed up, you may take them out.
Step 8: Finishing Touches
Sprinkle a good dose of powdered sugar, melted white chocolate sauce or vanilla ice cream on top.
Take note: They are best served when hot!
